Wine Making Notes

After a warm growing season, the harvest started as per the historical average with great weather conditions. All the reds were allowed the best ripening time and could be harvested at the peak of their flavours with ripe skin and see tannin as weather events were very limited and bird pressure was also very low. 

Our Tempranillo was sourced from two Margaret River vineyards: one located in Willyabrup and one in Jindong. The north Willyabrup property was planted over 20 years ago on its own roots and cared for since by a family dedicated to producing the best fruit in the most traditional ways. Almost everything is done by hand throughout the season by the owners, their friends and family. The Jindong block is located on a sun -drenched slope, with the dry ideal condition to produce fruit-forward, structured Tempranillo. The blend of those complementary two parcels allowed us to showcase the best Tempranillo terroirs Margaret River has to offer and the ideal conditions of the vintage. We harvested both batches in the early hours of the morning of 22/3, one with our hand crew, one with our machine. 

On arrival at the winery, the fruit was immediately chilled and sent to its fermenter for a short cold soaking. The fermentation work was traditional with daily pump-overs and one delestage to enhance extraction. After a few days of warm extended maceration, the fruit was pressed and the wine started its aging with oak, a mix of French and American, of which about 25-30% new. In January, the wine was racked and prepared for bottling, without fining to preserve all its original fruit characters.

Tempranillo


Nose

Aromas of blue pastilles, generous ripe dark cherries, with hints of cocoa and tobacco, freshly baked chocolate cake and black fig jam. 


Palate

Bright and juicy with intense fruit flavours of cherry, pomegranate, plum and fresh orange rinds, wrapped up in layers of robust tannins and wet-stone minerality that afford a dry long finish with hints of bittersweet chocolate and salty liquorice. 


Food Pairing

Nonna’s Spaghetti and veal meatballs. Freshly baked lasagna with a fresh garden salad and garlic focaccia. Chocolate fondant with peanut crisps.
